Thanksgiving 2017

Just taking a quick break.  There are just the four of us and with the hectic, overwhelming past few months we opted for simple.  The Turkey Breast is smelling great while it is cooking in the Crock Pot.

Turkey Breast in Crock Pot –

I cooked 3 large Sweet Potatoes (cut in half)  in my new Pressure Pot XL. Ok, that was a mini adventure.  Apparently it didn’t seal correctly and I was wondering why it was taking so long.  Error Code #3 – Pot Overheated. Cooled it down, all of the 1-1/2 cups of water was gone and the bottom was burnt. The sweet potatoes were in a steamer basket so they were still ok. Once it was cooled down and cleaned, I did “Help Desk 101” – which means totally disassembled & reassembled.  Since the sweet potatoes were already partially cooked from the earlier attempt, I just cooked them 10 more minutes (plus the time to pressure) and used NR (Natural Release).  The skins slipped off beautifully.  Then adding a bit of butter, brown sugar, cinnamon, allspice & nutmeg, I mashed them.  Finally putting them in a oven-proof casserole & topping with marshmallows.

Maintaining the simple theme, I assembled a green bean casserole and will make Stove Top Dressing.  Completing the easy menu will be yeast rolls, Sweet Potato & Dutch Apple pies from the local grocery store and my homemade Orange Cranberry sauce I made earlier this week.

Even though it is a simple menu, we are celebrating Thanksgiving being thankful for family & friends, and the many blessings we’ve had this past year.
